As the Head Chef in The Boathouse in Redcastle, I hope to bring to the table some new and exciting ideas. The availability of some of the finest fresh produce available anywhere in the country, right here on our doorstep in Inishowen, is a perpetual inspiration.Dishes prepared with fresh, local & seasonal ingredients are what it all comes down to for me, and that’s exactly what we strive to achieve & maintain here at The Boathouse.
I consider myself a no-nonsense Chef, having cut my teeth in my own mother’s kitchen as a child – watching her bake scones without having to measure anything was always a fascination – and growing up in a large family, instilled in me a deep appreciation for fresh produce, cooked with care, and little wasted.I strive to present the customer with the ‘home-cooked’ experience, but in a restaurant setting.
Blessed with an unrivalled location, right on Lough Foyle, and next to one of Ireland’s most famous fishing ports, Greencastle, we are able to avail of the freshest Atlantic-caught seafood. This, along with the freshest of local and in-season produce, will hopefully ensure our dishes continue to satisfy for many years to come.
